The first Friday of each month, Ruth’s Chris Steak House, in Lahaina, hosts a prix fixe five course, five wine dinner. On February 1, 2008, it was five different regions in France: Taittinger Brut La Française, Domaine La Roche Chablis, Chateau Mont-Redon’s Châteauneuf du Pape, and Saint-Émilion Grand Cru Classé Bordeaux. Executive chef Matt Paet matched the wines with five courses that were sheer perfection. First, l’escargots arrived en Cruet—wrapped in a buttery, flakey pastry shell atop a delicate mushroom duxelle. Then ahi with hamachi tartar, layered with chopped hard-boiled egg with a side of baby greens with lemon basil vinaigrette appeared. The matching wines were superb. Chef Paet surprised us with a smoky andouillet sausage, with tender chunks of duck and sliced beef fillet, served with white beans. Then a filet mignon was presented with a creamy potato purée and a balsamic and raspberry reduction with a compliment of ratatouille. Alas, a cheese soufflé for the finale. Delightful.
